Appe (Savory)

Ingredients:


1 tbsp finely chopped fresh coriander
1 green chilli finely chopped
2 tbsp finely chopped onion
oil
Salt to taste

Method:
1.  Add coriander, green chili, onion and salt to the batter. Add a tablespoon of water to help mix it well.
2.  Heat the appe pan and put a drop of oil in each cavity of pan.
3.  Now add a tablespoon of batter in each and put a couple drops of oil on each appe.
4.  Cover and let it cook on medium heat for a couple of minutes. The top should be almost cooked but not dry.
5.  Now flip it using a fork and let it cook on other side for a minute.
6.  Serve of with chatni.

Scrambled Eggs

Ingredients

4 eggs
1 tsp ghee
2 tbsp milk
Salt to taste
Fresh ground black pepper
1 tbsp grated cheese (optional for garnish)
1 tbsp tomato salsa (optional for garnish)

Method
1.  Break and lightly beat 4 eggs.
2.  Add salt, ghee and milk and beat again.
3.  Transfer to a thick bottom pan and keep on medium heat.
4.  Stir continuously till the mixture starts to thicken in about 3-4 minutes.
5.  Switch off gas and keep stirring for another few seconds. Don’t let the mixture become dry.
6.  At this stage add black pepper and cheese.
7.  Serve on toast. (with a spoon of tomato salsa)

Mango Banana Smoothie (GuiltFree)


Ingredients:

1 mango cut into bite size pieces
1 banana peeled and cut into slices
1 cup milk

Method:
1.      Store the cut mango and banana in an airtight container and freeze for 4-6 hours. (You can keep it frozen for days)
2.      When making smoothie add frozen banana, mango and milk to blender and blend till mixed well and frothy.
3.      Serve immediately.
4.      You can also use fruits like strawberry and chikkoo for this.

Fritata (Omlet Pizza)


Ingredients:

2 tbsp olive oil
1 small onion finely chopped
2 tbsp color peppers finely chopped
1 cup spinach finely chopped
2-3 garlic cloves finely chopped
½ cup grated cheese
6 eggs beaten with 2 tbsp milk
Salt and black pepper to taste

Method:
1.      Heat a non-stick pan and add olive oil.
2.      Add onions and garlic and sauté till translucent
3.      Add colored peppers and spinach and sauté for a couple of mins.
4.      Add salt and black pepper to beaten eggs.
5.      Add eggs to the pan and mix lightly till the vegetables are distributed evenly.
6.      Let it it cook on low flame till its almost set. Now add the cheese on top and cook covered for 2-3 mins.
7.      Serve hot.
8.      You can add finely chopped mushrooms to this.
9.      If your pan is ovenproof then put it in oven for 5 mins after spreading the cheese.

Hot Mochaccino

Ingredients:
1 tsp instant coffee powder
12 tsp sugar (or as per taste)
1 tsp chocolate syrup
1/2 cup milk
1/2 cup water
1 tbsp cream (optional)
1 small pinch of cinnamon powder (optional)

Method:
1. Heat milk  cream and water together till it just boils.
2. While the milk mixture is heating add coffee powder, sugar and chocolate syrup to a coffee cup and mix well. Also mix cinnamon powder, if using.
3. Pour a couple of tbsp of the hot milk mixture in the mug and mix till sugar is dissolved.
4. Now pur the rest of the mixture from a height to a get steaming hot cup of Mochacino.

Zatpat Batata Thaleepith (Rosti)

Ingredients:
1 large potato coarse grated
1 tsp oil
Pinch of salt, chilli pdr and turmeric pdr

Method:
1. Mix grated potato, salt, chilli pdr and turmeric pdr. Divide into 2 parts.
2. Heat 1/ tsp oil on a small non-stick pan.
3. Spread 1 portion of potato evenly like a thaleepith
4. Cook covered for 2 mins
5. Flip and again cook covered for 2 min
6. Repeat the same with rest of the potato.
7. Serve hot with sauce or chatni
