Dudhi Chana Bhaji

Ingredients
1 medium Dudhi peeled and cut into 1 cm cubes (all similar size so the cook evenly)
1 medium onion finely chopped
¼ cup chana daal soaked for 2-3 hours
1 tbsp oil
1 tsp mustard seeds
Pinch of hing and turmeric powder
1 tsp red chili powder (or to taste)
2 tbsp fresh grated coconut
2 tbsp fresh coriander, washed and finely chopped
Salt to taste

Method
1.  Heat oil in a heavy bottom pan and add mustard seeds.
2.  Once they sputter, add hing and turmeric powder.
3.  Add chopped onion and sauté for 3-4 mins till the onions starts changing color.
4.  Now add dudhi cubes, soaked chana daal (remove water), red chili powder and mix well.
5.  Add 1 cup of water (just enough to come slightly under the level of the vegetable in the pot) and bring it to boil.
6.  Turn the flame to medium and cook covered for about 20 minutes. Stir the mix every few minutes. Add a little water if the mixture dries too fast.
7.  Now check chana daal to see if it is cooked. When it is cooked, add coconut, coriander and salt.
8.  Cook for another 2 minutes.
9.  Perfect for any weekday meal or even for tiffin.
