Upasachi Batata Bhaji

Ingredients:
4 large potatoes
1 tbsp ghee
1 tsp jeera
1 green chili (or to taste)
2 tbsp fresh coconut
2-3 tbsp roasted peanut powder
½ cup raw peanuts soaked for an hour
Salt to taste

Method:
1.      Peel and cut potatoes into half inch cubes.
2.      Grind fresh coconut with green chili to make coarse paste without any water.
3.      Heat ghee in a thick bottom pan and add jeera.
4.      Add potatoes and sauté for a minute.
5.      Add peanuts and ground coconut. Mix well.
6.      Add water just enough to cover the potatoes. Bring to a boil.
7.      Cook covered on medium flame till potatoes are almost cooked. Keep stirring in between.
8.      Now add peanut powder and salt and cook for another 2-3 minutes until potatoes are fully cooked. You can add a little water to adjust consistency.
9.      Serve hot or cold.

Zatpat Batata Thaleepith (Rosti)

Ingredients:
1 large potato coarse grated
1 tsp oil
Pinch of salt, chilli pdr and turmeric pdr

Method:
1. Mix grated potato, salt, chilli pdr and turmeric pdr. Divide into 2 parts.
2. Heat 1/ tsp oil on a small non-stick pan.
3. Spread 1 portion of potato evenly like a thaleepith
4. Cook covered for 2 mins
5. Flip and again cook covered for 2 min
6. Repeat the same with rest of the potato.
7. Serve hot with sauce or chatni

Potato Sabji with a variation

Ingredients:
5-6 small round potatoes (not the ones used for dam aloo)
4 tbsp finely chopped fresh corriandar
1-2 green chillies - chopped
2 small colves of garlic finely chopped
2 tbsp of grated fresh coconut
1 tsp red chilli powder
2 tsp oil
1 tsp Mohri (Rai)
1 tsp Turmeric powder
pinch of Hing
salt to taste

Method:
1. Scrub and clean the potatoes with water and pat dry
2. Cut into thin roundlets with the skin on
3. Add chopped fresh corriandar, chillies, garlic, coconut, chilli powder and mix
4. Heat oil and add mohri
5. Once mohri sputters, add hing and turmeric powder.
6. Now add the potato mixture, 2-3 tbsp of water and salt as per taste. Mix well.
7. Cook covered with water on lid for 10 mins or till potatoes are cooked. Keep stirring in between

Great with chapati and perfect for lunch box.
