Pesto Pasta

Ingredients
1 cup dry small pasta
½ cup fresh basil leaves, washed, discard thick stems
2 tbsp walnuts crushed
2 tbsp almonds coarse chopped
1 garlic clove
2 tbsp olive oil
2 tbsp parmesan cheese (any other grated cheese)
Black pepper powder to taste
Salt to taste


Method:
1.      Take a big pot filled with water, add salt and bring it to boil.
2.      Once water starts boiling, add pasta and keep stirring every couple of minutes. The pasta will take 8-10 minutes to cook.
3.      Add basil, walnuts, almonds, garlic and olive oil to a small mixer jar. Blend to make a smooth paste. Add 1-2 tbsp of pasta water if required.
4.      Once the pasta is cooked, drain and reserve ½ cup cooking water.
5.      Put pasta back in the same pot and add the paste. Add salt, pepper powder and cheese and mix well. Add little of the pasta cooking water if required to adjust consistency.
6.      Serve hot with the side of garlic bread.
