This
is my Mallu Friends’s recipe. I have been making sambar like this for years.
You can use the Blanched Tomatoes for making this recipe.
4 tomatoes, Blanched
1 tbsp oil
1 dry red chili cut into 2 pieces, seeds removed
6-8 curry leaves
Pinch of hing
1 tsp Turmeric powder
1 tbsp red chili powder (or to taste)
1 tbsp Sambar Powder (I use MTR)
1 cup mix vegetables cut into small cubes (red pumpkin, brinjal, sambar kakdi)
5-6 sambar onions, skin and base removed
1 cup toor daal pressure cooked with hing and turmeric
1 tbsp thick tamarind paste
1 tbsp fresh coriander to garnish
Salt to taste
2. Once hot, add red chili and curry leaves. Fry for a few seconds.
3. Now add onions and fry on medium heat till they just start changing colour.
4. At this point, add chopped blanched tomatoes and mix well. Cook covered on medium heat for 3-4 minutes.
5. Add the mix vegetables, turmeric powder, chili powder, hing and sambar masala. Mix well and fry for 3-4 minutes.
6. Add 4 cups of water and bring the mixture to a boil. Lower the heat and cook covered for 8-10 minutes till the vegetables are almost cooked.
7. Now add cooked daal, tamarind paste and salt. Add water to adjust consistency. Cook on medium flame for a further 3-4 minutes.
8. Serve hot garnished with coriander.
