Dangar-Gawar Bhaji

Ingredients:
200 gms gawar, cleaned and cut into 1 inch pieces
200 gms of red pumpkin cut into 1 cm cubes
1 medium onion finely chopped
1 tbsp oil
1 tsp mustard seeds
1/2 tsp turmeric powder, 1/2 tsp hing
1 tsp chilli powder (or as per taste)
1 tsp jeera powder
1 tbsp jaggery
2 tbsp grated coconut
salt as per taste

Method:
1. Heat oil and add mustard seeds. Once they sputter, add  turmeric powder and hing
2. Add finely chopped onion and mix. Cook on low flame for 2-3 mins
3. Now add gawar and pumpkin, chilli powder and jeera powder and mix well. cook for 2-3 mins
4. Add a cup of water and bring it to simmer. Cover and cook for 8-10 min. Put some water on the lid.
5. Once gawar is tender, add jaggery, grated coconut and salt. Cook for a further 2-3 mins
6. Serve with chapati
