Gajar Halwa

Here is the season special Gajar Halwa. There is no cream or khava or milkmaid in this. Go ahead and enjoy this treat and let me know how it comes out.

Ingredients
2 cups of red carrots grated
1 cup milk
¾ cup sugar (or less as per taste)
1 tbsp ghee (साजुक तूप)
1 tsp green cardamom (Elaichi) powder
2 tbsp cashews chopped
2 tbsp bedane (golden raisins)

Method
1.  Heat ghee in a heave bottom pan.
2.  Add grated carrots and mix well.
3.  Cook covered on a low flame for 5-6 minutes till the carrots are almost cooked and give a nice aroma. Stir the mixture lightly during this process so it does not stick.
4.  Now add milk and cook covered for another 10 minutes. Add dry fruits at this stage. Keep stirring to make sure that the mixture does not dry out.
5.  Add sugar and mix well. Now cook uncovered on a low flame for 2-3 minutes till the sugar dissolves.
6.  Add elaichi powder and cook for another minutes.
7.  Gajar halwa is ready. Serve hot or cold
