Red pumpkin subji

Ingredients:
2 cups of red pumpkin cut in 1 cm cubes (or butternut squash if you are in US)
1 green chilli cut into 4-5 pieces
1 tbsp ghee
1 tsp Jeera
2-3 tbsp roasted peanut powder
2 tbsp fresh grated coconut
salt to taste

Method:
1. Heat ghee and add jeera and green chilli
2. Once the jeera sputters, add pumpkin cubes and fry well
3. Add 1/2 cup of water and cook covered for 10 mins
4. Check if pumpkin is cooked and if not cook little more
5. Add salt, peanut powder and coconut and mix well
6. Let it cook for another couple of mins.
7. Serve with roti
