Kheer

Ingredients:
1 cup sevai (I use MTR)
2 tsp ghee
2 + 1 /2 cup of warm milk
1 tbsp each of cashews and almonds, chopped
1 tbsp raisins
1/2  tsp of Cardamom powder
3/4 cup of sugar

Method:
  1. Heat ghee in a thick bottom pan. Add cashew and fry till light brown. 
  2. Now add sevai and roast on low flame till it changes color slightly.
  3. Add 1.5 cups of water and mix well. Let the sevai cook on a medium flame. Keep stirring to make sure it does not stick to bottom.
  4. Once most of the water is absorbed, add first cup of warm milk. Mix and let it cook on medium flame. Keep stirring.
  5. Now add another cup of milk and dry fruits to kheer and repeat step 3.\
  6. Add last ½ cup of milk and sugar and mix well. 
  7. Cook stirring just until the sugar is dissolved. 
  8. Switch off the flame and add cardamom powder. 
  9. Kheer is ready.
