Ingredients:
3 cups of mixed vegetables in byte size pieces (broccoli, cauliflower, green peas, sweet cord, carrots, French beans)
1 medium onion finely chopped
1 garlic clove finely chopped or grated (about 2 tsp)
1 tbsp. of olive oil
2 tbsp. butter
2 tbsp. maida
2 cups of milk (cold or room temperature)
1 tsp dried oregano
1 cube of cheese
1 slice of cheese
salt and black pepper to taste
Method:
1. Fill a large pot with water halfway through. Keep it on medium heat.
2. Put a large strainer on it that fits. Add all vegetables to the strainer and put a lid.
3. Once you see the steam coming let it steam on low flame for 15 minutes.
4. In the mean time, heat a thick bottom pan and add olive oil and butter to it.
5. Add onions and fry them for 2-3 minutes, Now add garlic and fry for another minute.
6. Add maida and mix it in gently for about a minute. Now add the milk and mix well.
7. Keep stirring this mixture till it is smooth and then cook covered for 2-3 minutes.
8. Now add salt, oregano, fresh ground black pepper and cheese and mix well. Let it cook for a minute.
9. Add the steam veggies to the sauce and mix gently. Taste and adjust the salt. This mixture should be slightly runny at this point. If it is too thick, add little bit of the steaming water (or warm water).
10. Butter a baking dish lightly and spread the mixture on it.
11. Bake in a 180Deg oven for 15 minutes. This should look slightly brown on top and bubbly.
12. Let it cool for about 5 minutes and then serve with garlic bread.
