Palak Kadhi

Ingredients
2 cups of finely chopped spinach
1 cup of curd (sour preferred)
2 tbsp besan
1 tsp sugar
1 tsp grated ginger
1 green chilli finely chopped
1 tbsp ghee (sajuk tup)
1 tsp jeera
1/2 tsp turmeric powder and pinch of hing
salt to taste

Method:
1. Heat ghee and add jeera. Once it sputters add ginger and green chilli and mix
2. Add turmeric powder and hing
3. Add spinach and mix well. Cook covered for 2-3 mins. Add 1-2 tbsp of water if required
4. In a bowl mix curd and besan well. Add this mixture to spinach and mix together.
5. Add 2 cups of water, salt and sugar and mix well.
6. Let this cook on simmer for 4-5 mins, stirring a couple of times in between.
7. Serve hot with rice or chapati.
