Bhogichi Bhaji

Ingredients:
1 up walpapdi cleaned and cut into small pieces
2 medium sized potatoes, peeled and cut into cubes
4 small brinjals cut into cubes
2 small red carrots cut into cubes
1/2 cup raw peanuts soaked for 2-3 hours
1/2 cup green peas or fresh tur dana
1 tbsp oil
1 tsp each of mustard, cumin, chilli powder, goda masala
1/2 tsp tumeric powder
pinch of hing
1 tbsp tamarind pulp
1 tsp jaggery
2 tbsp each of dry coconut and sesame seeds dry roasted and made into coarse powder
salt to taste

Method:
1. Heat oil, add mustard and cumin. Let them sputter
2. Add all vegetables and peanuts and saute for 2 mins
3. Add  tumeric powder, hing, chilli powder and goda masala and mix well
4. Add 1/2 cup water and let it come to boil.
5. Cook covered on sim till vegetables are almost cooked.
6. Add tamarind pulp, jaggery, coconut and sesame mix and salt. Let it cook till vegetables are well cooked but not mushy.
7. Serve hot with chapati.
